Home-made Pepsticks?

Thinking about throwing together some duck,pheasant,and deer meat and making some pepper stick. I have the cure but want to make the seasonong from scratch. Would like to hear some good home recipes.

Personally, I wouldn't "waste" pheasant on pepperoni, but then I haven't shot a pheasant in about ten years.

Thanks Loki,I shoulda seen that one. Sounds like a good one but I might add some crushed red pepper along with a little cayane. I'm only going to add a couple lbs. of pheasant just for fun.
