Just curious what ya having.

Were having the party/potluck. Dana an I are doing a couple main dishes. Not sure what everybody is bringing yet. I'll add to this when the family an friends chime in Yes there will be Q-view of the spread  ;)

22lbs pork butt
smoked baked beans
Asian coleslaw

I'm smoking up some pork butts too. Also doing bacon wrapped jalapeno poppers. Not sure what else yet.

NBC is streaming to tablets and computers this year.  Verizon has exclusive rights to smartphones per agreement with the NFL.

Take ground beef and a little pork sausage and mix them together. Put them in the crockpot with bbq sauce and grape jelly. They are amazing.

1.5lb ground elk
1.5lb ground venison
2lbs ground pork

Combine with 3 eggs, 1 minced sweet onion, 1 diced small bunch parsley (I prefer cilantro), 1.5 cups breadcrumbs.


If it is too wet add more breadcrumbs, too dry a couple tablespoons of water.


Kicked up add-ons:  garlic, jalapeño, small chunk of mozzarella on the inside.



Beat 1-2 eggs with 3-4 tablespoons of water in a bowl.  Set aside (egg wash)

Make meatballs to size you want (I aim for 1-1.5" diameter)

Fill a small bowl with cornstarch (dredge)

Fill another bowl with breadcrumbs.


To cook:

Dredge meatballs in cornstarch, then egg wash then breadcrumbs.

Brown in skillet in 1.5-2" olive oil until brown on all sides.

Place in baking pan with sides and bake at 350 degrees until internal temp reaches 160..

Variations:  cover in marinara to make Italian style or other sauces.


I cook large batches of these without sauce allow to cool then freeze in zip locks.  Quick dinners for the wife and kids when I am away.  Also quick way to speed make sauce and heat them back up.

If you don't have elk/venison use ground beef (at least 10% fat), and veal.
