Yes, you can freeze cheese after it is vacuum sealed. When you thaw it, let it sit at room temperature until it is completely thawed. That will help with the texture issues from freezing. Some cheeses though will be a little crumbly. Cheddar is one of them. Softer cheeses tend to freeze very well.
I was once told by someone obviously much smarter than myself that cheese can be frozen, but only once. My first thought was how in the heck does the cheese know how many times it's been frozen, I'm not falling for that. Trust me, voice of experience, unless you want cheese crumbles, only freeze once, it knows.
