Slow Cooker Turkey Breast.
« on: May 24, 2015, 12:19:31 PM »
Rubbed huckleberry honey over the meat and sprinkles some Tony's Cajun seasoning. I let the breast sit overnight, covered in the fridge, in that and a pool of olive oil. In the morning I made a bacon lattice on a cookie tray and partially cooked the bacon at 425 in the oven. I poured the bacon grease in the crock pot, added some more olive oil, and wrapped the breast in the half cooked bacon lattice. I let it cook on low for about 9 hours, then put it on a baking dish with a wire rack in it to let some of the excess olive oil drain. I broiled it in the oven at 525 to finish cooking the bacon. Leaving it uncooked until the end helped keep the meat nice and tender.

It turned out amazing. The flavor was amazing, and the meat was really tender.
