For summer sausages, pepperoni sticks, brats and jerky nothing better than Rober's Roost in Ellensburg.I do the butchering myself.
I got big time shorted by Linds the only time I used them. And I had to throw their pepperoni away. It was garbage. Sorry, but if anyone thinks their pepperoni is the best, you've been eating low grade dog food your whole life.
Wow based on my experience with him i would have never of thought anybody would have something negative to report.This is sad to hear.I had my deer processed by him about 5 years ago and all he said to me was clean off what you don't want to eat which i thought was fair enough it was not said with any disdain or rude tone at all.Then we had a guessing game of hanging weight between my father him and myself.I actually had fun being there.One thing i thought was funny is when Mike called a customer to let him know his elk was done being processed the guy flipped out because he had a large bull turned into nothing but breakfast sausage, summer sausage, pepperoni and jerky and the bill was over a thousand dollars.
Del Fox meats, up north between Arlington and MtVernon. Well worth the long drive, fair prices and a super clean processing facility. Friendly, fast turn around, and some tasty pepperoni and sausages.
Only been to Linds once and it wasn't even my animal. A friend asked if I'd help him wrap an Elk cause this butcher offered a discounted price if you set an appointment and wrapped while they cut. My bud had to pack two bulls shot about 30 seconds apart out of the eagle cap wilderness and much of the harvesting took place in the dark. After breaking out the tubs of meat Mike Lind decided to yell and berate my friend and scold him cause the meat was a bit dirty in some places. Sorry but that's all it took for me to decide that I would never give that sorry sack of $h!t a dime of my money and so I haven't ... That was about 15 years ago!

That was about 15 years ago! one of the reasons I like and will always use Mike Lind, he won't allow dirt, hair in his shop OK try and keep ALL dirt and hair out of a butcher shop and let me know how that goes for you? The point is that dirt and hair are part of the deal when you decide to be a butcher and I can assure there is dirt and hair in Linds shop at some point or another! Look none of us want dirty meat either and when all things work out as planned there isn't ... but there are also those times when it is unavoidable (like a bobcat dragging away some meat in the dark) I have worked with several butchers over the years and all of them are very understandable about the fact that stuff happens sometimes and it really isn't a big deal to rinse, wash or trim away what shouldn't go through a grinder. What's not acceptable for me is a butcher acting out and yelling at customer because of it It lost him business from me over the years and my friend never went back either .... and BTW we have both had some very clean animals over those years!
We use our shop and beer fridge at the home stead. Empty the beer fridge and place the boned out meat in tubbs and leave it there as long as I need. I do understand it is a little sacareligious but its all good! DIY the only way the cut, wrap and grind game meat.........
