A little update. If you read my first post you will know the elk ended up laying with the guts in it all night. I was really worried about spoilage.
I have it cut up now and I would say I lost about 30 to 40 pounds of meat. Not happy with that but I am not sure what I could have done differently. The hind quarter that was down was in the worst shape. Both hind quarters I lost meat near the pelvis, lost about half the tenderloins and all of the flanks. A couple of small spots in the ribs.
The rest seems to be fine. I had a roast off it last night and it was excellent.
Sure wish I would have found it that night but that's the way it went down and you can't turn the clock back.
Only thing left is take about 90 pounds of hamburger meat to get ground.
