Sharing with the neighbors
« on: December 23, 2015, 08:02:10 PM »
Well it is time to fire off the smoker. Neighbor is hanging around like a stray dawg!
Did some Bacon this last Sunday and the pork loin hit the smoker this evening.

Loins are Black Pepper, Apple Mesquite, and just plain old loin

Bacon and Dutch Babies for Christmas, Son will haul some of the loin back with him on the weekend. The neighbor showed up with cookies and I sent him home with bacon.

This reminds me - I been thinking I need to make a trip back to the east again sometime soon.  No particular reason,  of course.  :dunno:

Well when I move over there I would like to live close to you.  :chuckle:

I figure the loin would make some dang fine Ice Fishin Fare!!!
Sitting in a cozy hut with a heater perch fishin.!!!

Run it thru the slicer with some good cheese and perhaps a small amount of snow snake medicine!!

You know, with modern communications and travel, the whole world is your neighbor, neighbor! I'll just PM you with my address to make sure that your giving for the holidays is up to snuff!

Those look awesome.

It doesn't look like the quality I would give my neighbor.

You should probably send it to me for disposal.  :chuckle: :chuckle: :chuckle:

I literally just pulled about 30lbs of bacon and loin out of the smoker then read this

the bacon is fantastic, it's like jerky bacon being it's out of an old boar but I love it.  I cook it about a 1/2 thick then gnaw on it a while  :chuckle:

can't wait to try the loin, it's injected with the same brine and smoked to 150 degrees.  I'm thinking sliced very thin almost like a prosciutto

Yours are a lot more photogenic than mine, that belly was thick on mine
