Just filed my hunt reports on the wildlife site...  now I need info for making tag soup... how long to I boil the tags to ensure they are tender enough, and what are some good spices to add to bring out the proper flavors?

I'd pressure cook them 45mins at 5lb pressure.
Slap some bacon on a biscut and lets go, were burrnin daylight!

I usually boil mine for about 11.5 months until I can get fresh product.

I'd start by browning the tags in a pan with a little olive oil.  This will release all the essential oils from the tags.

After the tags have rendered down a bit, deglase the pan with the sweat from all of this years hunts.  Let the sweat simmer and reduce, about 15 minutes. 

Next, add some jerky, cheese sticks, and the power bars you ate while out in the field.  Cover, reduce heat to low, and simmer for 2 hours.  The tags will be very tender by then.

Personally, I prefer tag cocktails... marinate in favorite liquor, remove tag, add ice, drown sorrows.   :chuckle:

As long as you start your soup base with sauteed onions, carrots and celery you will be able to choke it down.
There is no greater respect to have for wildlife than to harvest an animal fairly and use it's flesh to feed your family.  ~me
