I'm thinking of maybe buying this pack mostly just for backpacking. Mostly just weekend excursions. Would this pack be sufficient?

Gonna be tite but will work if you have lite gear including backup clothes.  With bag, pad, tent, stove, rain gear, food, water, space starts getting thin. If you take binos, camera, spotter then its really too small.  Popular size is 5000 for backpacking couple days.   I use the 3500 and its really tite for two nites but i like comfort too.

It's all going to depend on the gear you pack in it. I have no problem heading out for a weekend with tent, mat, sleeping bag, stove water filter, yadda yadda in a 30L pack. Granted I have access to lightweight gear through work and have also changed my gear over the years to get light and compact. The less gear on your back the better you feel in the backcountry and the easier it is to move and want to do it again.

My wife I were just in Patagonia with a 4 season tent, 6-7 days worth of food, in 50L packs (essentially the size of the 3200 pack) and had zero problems.

As light as the kuiu is why chance it.   Buy the 5200 and cinch the extra left over down tight.  I have done 3 days with a similar sized back pack called the sacrifice by Badlands and I made it work but It was tight.   I own the kuiu 1850 and I fill that just doing day hunts.   By the time you pack ultra light rain gear and game bags it's real full especially if you take off your coat.
