Pheasant jerky

Has anyone done Pheasant jerky? If so would you care to share your recipe.

he thought of turning pheasant into jerky is appalling to me, I am just jealous that I have never had enough pheasant to think of making them in to jerky.  But I have shot enough turkeys and I would imagine they would be the same. I am having trouble putting on the attachment, but a teriyaki mix on a dehydrator for about 5 hours is yummy with turkey.

Thanks for the recipe!  I will give that a try!  I have hunted lots of game and have hunted Turkey a few times and they always give me the slip.....   Maybe you and I can get together this spring and you could show me the ropes.  I have had a great year on Pheasant so far.  The dog is far better than I am at hunting those birds.

I use the same recipe for just about everything, salmon, duck, pheasant, tuna.  For jerky I finish in the dehydrator   

1 cup brown sugar
1/2 cup salt
1 tablespoon bay
1 tablespoon cloves (whole)
1 tablespoon allspice
1 tablespoon mace
2 tablespoon white pepper

Cut into chunks or strips.  Mix and grind spices.  Mix spices, salt and sugar.  Pat mixture into flesh.  Cover and refrigerate 8 hours.  Drain, rinse and pat dry.  Dry 6-8 hours.  Smoke to the desired amount of dryness.
