Turkey recipes?

Hey all!

I've had success as the caller before, but never actually notched my own tag until this morning during a really fun run and gun session. Seeing as I haven't been the chef much, I'd love to hear your favorite recipes.. you might just help my mom and I decide on how to dine on our Easter turkey!

1 1/2 tablespoon of cayenne pepper
1/2 tablespoon of ground coriander
3 1/2 tablespoons of fresh lemon juice
1 clove of garlic crushed
Salt and pepper added for your personal taste.
Marinate for 3 hours
TURKEY COOKED FULLY AT 165°F
I ONLY COOK THE BREAST.

Yum! All of those sound good. I'll be needing to get another turkey, it appears! 

We ended up doing turkey two ways... made a marinade for the breasts with lemon and fresh herbs and garlic and let it do its thing overnight... then slowly and carefully cooked it in a cast iron pot in the oven in a broth bath. We paired that with sweet/red russet garlic mashed potatoes and green beans. Yum!!!

The legs and thighs ended up making delicious turkey tacos. Now I just need another go at some of those recipes!

Honey, mustard, curry sauce over turkey and rice.

1/3 cup honey
3 tablespoons mustard
1 teaspoons yellow curry

Clean the tendon out of the breast and dice. You can bread and fry, but I just cook in olive oil and salt and pepper. Put the turkey on brown rice and pour the sauce over all of it.

I double or triple the sauce recipe. Heat it all before pouring on turkey and rice. This is excellent with grouse too. Easy to make and everyone in camp loves it.

I might be a bit late, but here is hands down my favorite way to cook wild turkey. We use this marinade and then put a buncha veggies on kabob sticks! The link below is my friend and mines website. Work in progress, but some cool stuff in there.

RECIPE:

Take one side of the wild turkeys breast meat and trim out the tendons and gristle.
Cut the meat into 1-1.5 inch cubes and set aside.
In a blender combine the following ingredients:

1/2 cup soy sauce
2/3 cup vegetable oil
1/4 cup granulated sugar
2 Tablespoons brown sugar
2 Tablespoons lemon juice
2 cloves garlic
Blend on high till a uniform consistency is achieved.  If you don’t have a blender (like us) it’s fine to mince up the garlic and mix the ingredients together in a bowl.

Add the marinade to the cubed turkey chunks, cover, and let sit overnight.
Skewer chunks and grill until corners darken.

Same way as a grouse - 2 cups chopped celery and 2 cups chopped apples, pack of wild rice mix,  mix together in cast iron pot with lid.  poultry spice turkey breast and place on mix.  Cover with a few strips of bacon.  Bake with lid on at 350 for an hour.
