Carbon steel knives

What is a good source for good quality, reasonably priced carbon steel knives.  Need a link to give SWMBO and the MIL for future gift ideas.

Hunting buddy made a skinner and boning knife for everyone in camp last year.  But he's exiled to Georgia for a while as he waits on Boeing to go from purge mode to binge mode again.

I'd love to get leaf springs and make my own, but I don't have time for half the hobbies I already have.  Making knives, fun as it would be, is not in the cards.

Also, what's the recommendation for waterstones to sharpen with?  Not too spendy until I get good at it.

I would check with sawmills for their used up saw blades.
