WINGS AND YOUR SAUCES.
« on: November 19, 2017, 04:29:15 PM »
Ok everyone time to share your chicken wings sauce recipes.

I make Franks wing sauce a lot, and use just ranch or blue cheese as well. I made honey mustard tonight off the inter webs and wasn’t impressed with it.

I know I’m not the only chicken wing lover on here.  :chuckle:

Dry rub only on wings for me.  Put them on the pellet grill or regular bbq.  Try it, you’ll never go back.

Not for wings but thighs. I like to do 2 to 1 ratio of orange juice and teriyaki sauce

Yep I’ve done that and like them. But it’s cold outside this time of year, and I don’t have a good place under cover to do that.

Deep fried thighs, wonder how that would turn out.  :dunno:

Sear them in cast iron then bake. Amazing.

Now, that definitely sounds delicious.

I strongly agree with this.

The big thing is seasoning you can buy at Red Robin , I pat the wings dry then coat them good in that seasoning and BBQ ,  I make a batch like that and then another batch but I put sweet baby rays original on it, let it carmelize and then another coat and let it carmelize!! I LOVE a thick layer of gooey sweet baby rays, and I LOVE wings

This recipe is from The Barbecue Bible.  In the book they're called "Jake's Eat It and Beat It Wings".  This recipe makes the most delicious wings! I was a bit skeptical about the oregano, but it really makes the recipe.  3-3.5 lbs wings, 2 tsp cayenne, 2 tsp oregano, 2 tsp garlic salt, and 2 tsp black pepper.  Put all in a big Ziploc or covered bowl in the fridge for 24 hours before cooking.  Mix or stir a few times while they're "marinating".  I usually cook mine for about 1.5 hours on my Weber kettle on indirect heat with at least a couple handfuls of wood chips.  Turn once at about 45 minutes.

I like to mix softened butter with a bunch of tapatio hot sauce, brush on the wings then bake them in the oven.

OK, I love me some wings, but I've gotta put my foot down. Smoked. Baked. BBQd. They're all delicious. But a true chicken wing comes out of a deep fryer, and it doesn't get dipped in ranch or honey mustard!
Carry on.  :chuckle:

Take wings and cut into drumlettes and winglettes, at least that's what I call them.
Pat dry.
Create a flour/salt/pepper dredge. Coat once. Let rest a few min, then coat again.
Deep fry at 375 until they float (8-12 min).

Then toss them in your favorite sauce and serve immediately. CJ's from Columbia Missouri is my fav.

Se Merkaba's response below. But can also add garlic powder, cayenne, Old Bay, or whatever clicks your switch. Lately my go to sauce has been fish sauce, soy, rice vinegar, sugar, green onions, lemon grass, etc.
