I got my first mountain lion and it’s just in time for our churches annual wild game feast, somebody give me a lion recipe that will knock some people’s socks off. I’ll add a pic of the lion here but for the full story go look in the “other big game” section

Any of your favorite pork recipes will work well. I used Rinella's Osso Buco recipe from his cookbook when my family was in town for the holidays. I prepared it over polenta and it was a major hit. I had a large group and doubled the recipe and it was so tender and delicious everyone loved it! I half thawed the cougar shanks before cutting and they cut nicely, then tied them with butchers twine and let thaw completely before preparing.
For an appetizer I thawed a piece of cougar backstrap, seasoned it and seared it in cast iron, then finished it in the oven until internal temp was over 160. Sliced thin and prepared a glaze to drizzle over the top and there was none of that left either. Everyone who has tried cougar loves it, it just takes some people tasting it to get over the mental part of eating "cat." Even my CA relatives went in for seconds.

Really good advice, to follow the variety of options available for pork.
Super delicate balance between thorough cooking and toughening it. Like venison, only you have to cook it through due to it being a predator. Do it right, it's amazing!

Very Nice looking cat and envious of you being able to hunt over dogs as most on here can attest to it is darned near impossible to get one without them, BUt it is doable, so at least I'm gonna keep trying as long as the body allows me to
