Depending on what year you have, change your fuel pump as soon as possible. 

My fuel level gauge has been acting up as well the past couple years.

its an 06, I shouldn’t have any issues with my fuel pump. But yeah, other years certainly have issues there.

Look up how to clean your cooling stack. Maybe the cooler is plugged with bugs and debris and such blocking air flow. It's an issue on anything, but I think I've heard these trucks are more prone to this becoming an issue. Stuff accumulates between the cooler and the radiator and blocks air flow. Trans fluid goes through the radiator part of the radiator as well in that truck.

With the proper gear...one could actually diagnose it rather than throw parts at it....

No.
In terms of your fuel gauge, I'm saying that you should diagnose it rather than shotgunning a fuel pump or an instrument cluster at it.  It won't necessarily have codes and even if it does have codes, the check engine light is not always going to come on.

Regarding your transmission, I'd probably due the trans flush and the filters, and then I'd check and make sure the cooling system components are free of the debris buildup that blocks air flow as it seems to be an issue with these trucks, then I'd tow the trailer and see how it goes. I'll add that I would definitely flush it with a flush machine or another way of actually getting all the fluid out of everything. IF you're just draining what you can, you're not going to help it.

Gotcha!  The fuel pump is working fine, i was told it's most likely the fuel sending unit and that it's inside the fuel tank.  Not sure what's easier, taking the bed off or lowering the tank??  Thought about just cutting a hole in the bed of the truck above where the access is to the sending unit, then just tack weld or JB weld it back.  It's very intermittent, hasn't stopped working now for at least a year, of course now that I said that.....

Yep.
With a scan tool, you can see if the sender is working or if it's the cluster. It would suck to cut a hole in the bed of your truck and replace the sender only to find out that that's not what was wrong with it.

While I agree something seems amiss, 275-280 isn’t gonna hurt anything for a few minutes pulling Chinook pass. Long term of course those temps will be detrimental.

Generally speaking, tranny fluid would like to be at 170F.  Beyond that it's properties break down and are not recovered by lowering temperature, i.e. over temped fluid is permanently degraded.  The level of degradation increases exponentially with temperature.  The chart below is pretty typical regarding the effects of temperature on fluid.  Personally, I pull over if my tranny gets to 225F.  If it hit 275F I would be changing fluid at the next available opportunity.  A tranny fluid change is obviously way less money than a new tranny.

I should look into after market gauges, I just don't trust the idiot stock ones.  I pulled it this weekend but only an hour away and no steep hills, it seem to do fine but the temp got to 250 if the gauge was correct, didn't even go over 200 on the way home.

You can put an Edge Insight in it for less than gauges and monitor a whole lot more. They seem pretty accurate in my 06.

I have an edge ll, put it on the tranny fluid temp this weekend, also had a lazer heat gun to check the tranny itself. Gauges seems to be spot on, only pulled the trailer about 15 miles, slight short hills and my temp went up to 205.  Not sure what that means.  I have an appointment at Puyallup transmission Thursday to do a diagnosis.  Hopefully I’ll get some solid answers. Looks like I can get a brand new custom performance tranny for $3,000.  That’s a relief, I thought a tranny would have cost me $10,000.
