-I pan fry half a pound of bacon until it is about halfway cooked, cut into 1 inch pieces, then set to the side. Keep the bacon grease in the pan. -Chop up one white onion, one orange and one red bell pepper, and sautee in the bacon grease until they start to soften and season with salt pepper garlic powder. Sometimes I add some diced jalapeno for some heat.-Mix the peppers and onions with two large cans of your favorite beans in a baking dish, I usually just use Bush's for ease. -Spread the pieces of half cooked bacon over the top of the bean mixture. Bake at 350 for about 30-45 min, or until the bacon on top is to your liking.Enjoy with your favorite smoked meat and cold beverage!
Well not to brag, but my family has the best baked bean recipe in the state...probably even the world We even had our collection of family recipes published in a cookbook! This baked bean recipe is super easy, and can be doubled, tripled or even quadrupled for large crowds. I usually make mine in a crockpot (or crockpots) and it's always a hit at BBQ's and potlucks.
