Potato salad is ready.

Ingredient List:

---Yellow potatoes
---Hard boiled eggs (18)......sliced
---Bacon (1-2 lbs.).......crisp....cut or crumbled
---Best Foods Mayo
---Grey Poupon
---Black olives
---Red bell peppers
---Scallions
---Red onion
---Celery
---Claussen Dill Pickles (refrigerated section)
---Pickle Juice (the SECRET ingredient)

I cooked potatoes and eggs yesterday and put in frig to cool. Also fried the bacon crisp yesterday (4 lbs.) as a potato salad ingredient but also for the two days of BLTs. Today was assembly day. Prep all the ingredients, sliced up small. Put the potatoes and eggs in first with lots of Mayo.....stir, stir, stir in a large pot. Slowly add ingredients, stirring, stirring, stirring. Sample often to determine your preferred taste.....add more Mayo and pickle juice to enable the stirring.

Pork Butt goes in the Weber Smoky Mountain tomorrow early so by afternoon, we move on from one pork product to another. Lots of IPAs also cooling down.

Yum, other than the bacon, your recipe matches my mothers. The pickle juice is key.  :tup:

Sounds like a winner to me, I prefer Hellmann's mayo. Using Grey Poupon also makes a big difference over the yellow stuff they call mustard. Please don't make this recipe for a political statement you know @Fidelk loves his IPA's.

Tid-bit- Best Foods and Hellmann's come off the same line the only difference is the label.  :)

I love me some potato salad! If you haven’t tried this little twist, try smoked potato salad. It’s a nice variation. You can either smoke the potatoes or use smoked eggs. It’s good either way.

I have to try this recipe, sounds great. My only concern is how many pounds of bacon to cook, to somehow end up with 1-2 pounds left over.  :chuckle:

I’ve done the smoked potato salad and it’s one of my favorites. Basting the potatoes with butter and sprinkling with salt and pepper. 👌

Give it a try.....ingredient list and process is solid.....years in the making. Don't have amounts to post since I keep tossing things in as I assemble. I buy loose celery from Safeway and try to get small narrow sticks with the leafy tops. I buy Costco's Kirkland bacon and fry all 4 lbs. at once and devour half of that on the two day runup to PS Day. This is a once a year event.
