They really get a bad rap. I've eaten them fresh, salt cured on bagels, smoked and now jerky. Nobody is going to mistake them for CR springers, but then again none of us eat rib eye every night.

Quick from water to table is key with humpies. If river fishing, start your fire and get the skillet hot before your first cast.
Humpies go soft much faster than most other fish IME. Bleed them, ice them, cook or smoke them ASAP.
