Once you get a good edge on your knife you shouldn’t have to do a full re-do unless you really abuse it, chip it, or something similar. Just touch up with a strop or ceramic rod and you’re good-to-go.

Good tip. I also saw one once about using the edge of your truck side window, actually did it once and it worked fairly well.

Yes, for years and years. Just a ceramic sharpener, after all. Be sure to wipe the black residue off the bottom of the coffee mug, or the boss of the house will have you sleeping with the dogs for a while.
