Actually braising a set now for a couple hours from a Tom I got on Friday - anybody else had good luck with the thighs?

There was a meat eater show where they put them in a crockpot. They then pulled all the tendons and made a turkey salad for sandwiches, looked really good. Hope to try it this season

Just boil the cr*p out of them with some salt, pepper, couple of sliced onions and any other spice you might like. When the meat is falling of the bone, they are done. Yank the tendons and start eating. Yum!

Legs and thighs both make great soup. Boil until meat is tender, remove all bones, add favorite seasoning and veges and boil until veges soften, add noodles and boil until noodles are done!

Marinate in teriyaki or brine, throw them on the smoker and finish on the BBQ. Then cut into thin strips and serve over rice. I mix garlic and butter into the rice, sometimes some chicken base too.

Braised and fried with peppers (spicyness to liking). Best tacos or enchiladas! Rinse and repeat for goose.

They are great in the pressure cooker. Brown them in a cast iron, then into the pressure cooker. Add spices & beef or chicken broth and shred the meat for tacos.

Stuff them in an instant pot, fill with chicken stock until they are almost covered, manual 90 minutes. Pulls right off, tendons just fall away. I put mine on top of mashed potatoes then cover with gravy but you could do whatever. Save the broth.

I did some thighs and legs from fall birds last year. I went the "confit" way. Put the whole thigh/leg(skin off) in a salt, sugar and aromatics rub in the fridge overnight. Then I took some warm melted beef tallow and put enough in a cake pan to mostly cover the thighs along a couple of heads of garlic chopped in half. Baked it @ 250 for 3ish hours or until fork tender. Then I covered it in foil and let it cool down enough to put in the fridge overnight. The next evening I warmed the pan up enough to pull the meat out of the tallow. The bones fell right out. Pan fried up the meat like carnitas for tacos. My wife thought it was pork, it was very tasty.
