YUMMM that is good

After a long 10 days in the cure my 1st attempt at buckboard bacon was finished curing and smoked.  Tried my first batch this morning for breakfast, and I will never buy store bought bacon again!  I used the Hi Mountain buckboard bacon cure, and smoked with cherry.  John

He used a pork butt roast and some of Hi mountain buckboard bacon cure this is a great and easy to use cure for bacon and it is the best tasting bacon you can find once you start making this stuff you will never buy store bought bacon again

looks great! i have been using buck board to cure my hams and bacons for a long time now. i will never use anything else! everyone who wants to know. just follow the recipe that comes with the cure. it turns out great!

Thanks BTKR and dogtuk for posting the recipes for everyone.  It was you two that inspired me to try this and I'm glad I did.  Just to let everyone know it's really easy and dogtuk is right, once you try this bacon, you will never eat store bought bacon again!  The large piece of pork in the photo is our home made ham for our Christmas dinner.  Can't wait to try that out.  Thanks again everyone for the compliments and a big thank you to Huey for the help.

I just rubbed a pork but and it's in the fridge soaking.  There's lots of good info on here.  Thanks you guys for all the good photos and instruction.  I used Morton tender quick 1T per lb. without any seasoning.  Morton salt has meat cure recipes.  I think I'll smoke it up Thursday night after a good blacktail hunt.  I'll bet it will make good bbblt sandwhiches!

Yep, I'll take some pics before and after.  Right now the only recipe is the Tender Quick, but I'm gonna rub pepper and brown sugar on before the smoker.  I want to try to get a peppery glaze and smoke it up with some hickory and apple mixed.  Can't wait.   :drool:

You are right on BTKR.  Huey (dogtuk) has this smoking process down to a science.  He never hesitates to answer questions or give advise and he is a great guy to boot.  He has helped me out a great deal and I have a ton more to learn from him.  Smokepole, make sure you post pictures of your when your done.  Talk with you all soon.

OK have a ? does this bacon taste like breakfast bacon or does it taste like Canadian Bacon not a big fan of Canadian bacon but love breakfast bacon. This looks really good and I just built a smoker so what a way to give it a try ( after I make summer sausage for the daughter ).
