My wifes homemade wine

It was my wine but, since declaring a few weeks ago that I need to stop drinking, it has become my wifes wine.  I started making it a month ago. I made 3 quarts of watermelon, 3 quarts of plum with skin on, and 3 quarts of plum with the skin off.  I mashed up the fruit and put the mash in the jars and set the jars in a warm room for a week.  After a week, I opened the jars and smelled very strong alcohol.  I squeezed the mash and strained the mix and added distilled water and 5 tbs of sugar for every quart, resealed, and put in a cool dry place for 3 weeks.

3 weeks was up today.  I pulled them all out.  The watermelon wine was rotten and had to be thrown out.  The plum without the skin was like campaign.  Very carbonated and alcoholic.  Not very sweet but enough that I could taste the plum.  FYI, I only tasted about a teaspoon of each.  The plum with the skin left on for the mash was not as carbonated, not as alcoholic though I could taste the alcohol, but VERY sweet.  This will be the best of the batch I think.  Anyway, I filtered each quart again, to 2 of the quarts, I added 3 more tbls of sugar, and the others I left them how they were.  Then I resealed and returned to the basement.  I have to do this every 3 weeks for 12 weeks, then again 5 months later, then one last time at the 1 year mark.

So you quit drinking but are still making wine and sampling it? I don't know if that is a successful equation.

I think the wine was already being made before he decided to quit.  :dunno:

The wife didn't want me to throw it out.  I was going to but she said to continue with making it and she'd drink it.  She has the equivalent of a 6 pack a year so, it should be around a while when it's done.  I only sampled a total of 2 teaspoons.

I wonder why your watermelon went bad . i made 5 gal. and have to let it sit for a year i didnt add any water to mine all juice and 13 pounds of sugar.

I have never tried making watermelon wine, how does it taste? Right now i have 10 gallons of plum wine and 5 gallons of blackberry wine going. I tried the blackberry a month ago and it was really bitter but after letting it sit another month it really mellowed out and taste good now. i will probably bottle it next week.

watermelon is real good i mix it with strawberry wine and try a bottle of blackberry brandy to your blackberry wine .

My one try at watermelon wine failed miserably as well.  If you use pure juice for your blackberry wine, there is no need to add anything to it.

I think watermelon wine would probably do better with some kind of white grape as a base.  That is what is recommended when doing dandelion wine as well.

i add 3 cans of juice to all my wine it gives it body . but i was told by the wine guys the bad smell of the watermelon doesnt mean its gone bad  but i cant stand it so i mixed strawberry to it .we also tryed blueberry that turned out real good .

My blueberry from last year is really flavored well but is also too dry for me.  I have been waiting and racking so I can sweeten it w/o sulfites.  Might try corn syrup as there is something a bit off when I use sugar.  It is great with a splash of 7-up though, hence there is only about two gallons left of five to bottle....   :(
