BBQ Crockpot Venison-Elk-Moose for Everyone - Edit Update.
« on: December 25, 2010, 05:48:13 PM »
This is a great dish for holiday meals - it holds for hours and even the yuppies will be gobbling it up.  Even good the next day cold.

BBQ Braised Whitetail

Ingredients:
3 pounds Venison stew meat
1/2 lb. bacon  ( reduced from 1 lb !)
1 cup Onion -- diced
4 cloves Garlic -- chopped
1 cup Apple Cider
1/2 cup Worcestershire sauce
2 teaspoons Johhnys Seasoning for meat
2 teaspoons Johnnys
2 cups Catsup
1/2 cup Molasses  ( reduced to 1/2 cup, 3/4 was too much !)
1/2 cup Brown sugar
Directions:
Place venison, onion, garlic, cider, Worcestershire sauce and seasoning in crock pot. Cook on high for 1 to 2 hours until meat is cooked.  Discard ½ the liquid ( 2 cups approx.) Cook bacon well and crumble or chop. Add bacon, catsup, molasses and brown sugar. Turn crock pot on low and heat for 4 – 6 hours or so. Serve over rice ( brown/wild is good) or potatoes or by itself.
