Yeah I know. After I found out it was a wet brine I gave them a call. They told me about the honey dry cure but I'm not a huge fan of sweet bacon. Guess it depends on who you talk to in there. 2 girls didn't know what buckboard bacon was. I'll give hi mountain a shot, if I don't like it then I'll head to michlitch.
