smoking cheese?

im in a smoking mood.... i have all the fish in my freezer thawed and about to be brined, salmon, cods, scallops.... im gonna try to smoke it all... hell im even planning on smelt jigging cuz i heard smoked smelt are awesome....

however there is one thing that i always see sold in the grocery store and ive always wondered how to make.....

how do you smoke cheese? is it is as simple as going to safeway and buying a brick of tillamook black lable and cold smoking it for 18 hours?

how do you make smoked cheese???

I smoke my cheese by placing a pencil soldering iron inside a metal can (from standard soup or canned vegetables) that is full of smoking chips. You poke a bunch of holes in the can and drill a hole in the lid for the soldering iron to fit through. I put this inside my bbq and let it smoke for about 2-1/2 hours. Sorry I don't have any pics.

I found a similar set-up on the internet. I poke about 10 holes in the side of the can and I fill the can all the way full with applewood chips. I also don't cover the bbq up like this guy did.
