Been awhile, been working on the remodel again. Picked up some thick cut pork chops, very good looking pieces of meat! Threw on a rub(wished it sat longer), seared on the grill as hot as I could get it for 2 minutes each side. Popped into smoker at 200 with some hickory/cherry. Got to 150, pulled and seared again on grill for a minute each side. Gotta be the most tender pork chop we've ever had, seriously. Could have been the way it was cooked but the fat marble was great so who knows.
