Best Dang Pasta Salad---I have ever eaten

Spicy Pasta Salad with Smoked Gouda, Tomatoes and Basil

Ingredients
12 oz pasta (spiral or your choice) calls for mostaccioli (whatever that is)
1/2 cup Mayo
1/4 cup whole milk
4 TBL whiter vinegar
1-1/2 tsp Adobo Sauce (from chipotle peppers) or one minced Chipotle
1/2 tsp salt
Ground black pepper to taste
10 oz Grape tomatoes--halved lenthwise
1/2 lb Smoked Gouda cheese, cut into small cubes
24 whole Basil Leaves (chiffonade) cut into small stips :chuckle:

Preparation
Cook pasta until done, Drain rinse in cold water. Set aside
Mix Mayo, milk, vinegar, salt, pepper and adobo in a small bowl
In a large bowl stir together pasta, dressing, halved tomatoes, and cubed Gouda. Taste for seasonings add more salt, pepper, vinegar if needed. Stir in basil at the end
Refrigerate a couple of hours before serving



This would be an extremely good side for a BBQ ;)

You won't be dissapointed. I am usually luke warm on pasta salad, but I just want to bath is this stuff.

Careful on the Adobo.  I made it tonight and went just a tad strong (a couple of dollops) didn't really measure it (I like things hot, but the rest of the gang, not so much). Just a bit hot for a pasta salad. I will cook up some more pasta and add to it to dilute just a bit.

This recipe for the "Best Dang Pasta Salad" sounded so good I just had to make it.  Made it today, it is delicious! Served it up with BBQ Chicken...   The only thing I will do differently the next time I make it is...  I will 'double' the recipe !!  Thanks for sharing your great recipe!   :IBCOOL:

Man, I must have done something wrong or I went wrong with the Adobo stuff. I think maybe I bought the wrong stuff. I made this the other night. It was very bland. I tried it 1st and thought it was, so I added some more of the Adobo stuff, still no spice.
Dunno...
It was good, just bland. Again, I'm sure I went wrong somewhere.
My wife and kid liked it, I was just looking for some more zing. I will try a different grocery store for the right kind of sauce.

I bought the canned chipotle peppers in adobo sauce, Small can in the mexican section, next to the Jalapenos etc. Believe me that stuff is hot. i licked the spoon after dishing it out of the can, Maybe some cans are spicer than others. I tossed the can and keep the extra in a small jelly jar in the fridge, it keeps forever.
You might want just a little more vinegar as well

Yup...dangit I just talked to my buddy here at work, the foody guy, and he clarified what I should have done. I bought the adobo stuff that you'd use to make adobo chicken or something like that...I should have bought the chipotle peppers in the adobo sauce...duh...dangit...I got to go make it again now.

Just be careful with the "real" stuff", follow the directions first and then add more if needed. I think your wife and kids would appreciate it, cuz that heat stays in your mouth for awhile
