Nice pickles, did you grow those?

When you do your beans do you put them in raw and then pressure cook or do you parboil first?  Do you do pickled beans?  Yum!!

I do the beans raw{cold pack} then pressure cook at 10 lbs for 20 minutes..I will do some pickled beans and some sweet pickles next week..yes we grew these,my jalapeno peppers are really producing,the Cayenne's look good waiting for them to turn red,then can some salsa

Those are great looking cukes.  I've got a bunch of dill that is ready to use but I sold all 8 pounds of beans, I picked last Thursday from a row and a half, at our Island Farmer's Market.  I am growing lemon cukes for the wife but they are just starting to fruit up.  My pickling cukes never really got going.

I still have three 25' rows of beans that have not yet produced.

for dill pickles here is the brine below


      3 cups water
      2cups white vinegar
      2 1/2 tablespoons salt{kosher or pickling salt}  no iodized salt
      1 teaspoon heaping blackpepper corn
      1 teaspoon heaping mustard seed
      a thick pinch of red pepper flakes

       bring to a boil and keep hot till ready to pour over pickles.

       then I put 2 garlic cloves per jar and two sprigs of fresh dill sprigs in the bottom of the jars
       pack the jars tight with whole fresh clean pickles or spears..ad another fresh sprig of dill and pour brine over them to a 1/2inch from top of jar...run a small spatchula around the inside of the jar to realease any air,put lids on and water bath for 10 minutes,pull out and leave on a towel on the counter for 24hrs

Nice looking crops Rasbo.   We just did another batch of beans in the pressure cooker.   2nd one now.   My corn looks abysmal but the beans did well.

do you ever add anything to your beans?  I put 1/4 teaspoon of salt and thats it.I was thinking some red peppers diced as well might be good

Nope, just the beans.   Bacon or weiners maybe when we cook them up, but thats it.

I've added carrot slices to the beans before.

Rasbo, can you post your steps for the bread and butter. We just got into canning our cucs that are growing like weeds. Going to try your dills above tomorrow and hopefully the bread and butters the next round.

                                    Bread and Butter pickles

                                                         Brine
6 cups vinegar
5 cups sugar
3 tbls mustard seed
1 1/2 tbls turmeric
1 tsp allspice   
                                          vegies
7 cucumbers
2 large onions
2 red peppers
 
Cut cukes 1/4 inch thick same with onins and peppers,put these in a large bowl and sprinkle with kosher salt as you layer these. I use about a 1/4 cup of salt...then cover with ice and let set in the refer for at least 3hrs.After they have set rinse and drain well..have your brine made up and boil for 10 minutes,dump your pickles and onions and peppers into brine and let it come back to a boil,then fill your jars and water bath for 10 minutes,,

I do this same recipe and use fresh Jalapeno peppers instead of cukes,wow what a killer relish  Enjoy

I didn't realize this post was so old at first, I was wondering how green beans and that were ready already.

Started making our dill pickles last night, similar brine as Rasbo's but equal parts water and vinegar, 1/2 cup sugar, 1/2 cup canning salt, peppercorns, mustard seed, sliced fresh jalapeņos, fresh dill, and a grape leaf for crunchiness. I was drooling all night and all day today just thinking about them. I go through a couple dozen quarts a year, sometimes once opened they are gone in one sitting  :chuckle:
