Anyone have Pepper Pickling Recipes?

I’ve got one bush of Anaheim, and Serrano peppers. Would like to try picking them.

Brine: two quarts water, two quarts white vinegar, 3/4 cup canning salt and 1/2 cup white sugar - bring to rolling boil
In the jar: 1/4 tsp. Mustard seed, one level tsp. pickling spice, three or four cloves of garlic and the peppers whole or sliced
Pour boiling brine over contents of the jar leaving an honest one inch of head space at the top.
Hot water bath jars for five minutes, remove and set aside to cool and once sealed store in a cool dark place
Does not require refrigeration until the jars are opened

I've only done jalapenos but I imagine it would work for any peppers

In November U.S. manufacturing contracted for the the ninth consecutive month. Layoffs across the economy are higher than anytime since the pandemic in 2020 and I just read that the Midwest farmers will be receiving a 12B bailout due to 50 year trade relationships being destroyed. I have to admit that I was a sceptic and didn't believe in the effectiveness in tariffs but I'm a believer now.

Can you use the pickle recipe on peppers?

I think the extra vinegar and sugar work better for peppers than the garlic dill recipe - its all personal preference though. As long as you have vinegar and salt in the recipe and a good pickling process th vegetables will pickle and the jars will seal.
