venison jerky with a dehydrator

I'm making a ton of jerky this year and I'm tying a little drizzle of honey over the top of the jerky when it has about an hour left in the dehydrator with a few shakes of red paper flakes over the top of it. Anyone ever tried this? hoping the honey dries out/obsorbs into the meat and just doesn't make a sticky mess. My total time for this batch in the dehydrator at 160 degrees will be around 5 hours and 15 min (pieces are a little thicker than my last batch). I did a 24 hour marinade in a minched garlic and green onion sauce with brown sugar, liquid smoke, onion salt and black pepper.

Why not just add the honey to the marinade? 

I bet it is super delicious either way..... :drool: :drool:

That seems like a long time in the dehydrator. I cut mine a quarter inch thick and pull most of it at about 3 hours. I bet your jerky has great flavor. But 8 also think it will be sticky. Definitely worth a try though.

My last batch took three hours and 45 minutes. The reason this batch took so long is because I made some very large slab thicker pieces. I still took them out when they were soft.

I made this batch with my environmental science/forestry/outdoor rec class and they absolutely had a blast. I’m not getting to bring much of it home. I’ll tell you that it was absolutely sticky and delicious 😂

I’ve done that before and it is good but I was going for more of a glazed look on the jerky this time and it did end up completely different. It is incredibly tasty, but it is a little sticky lol.

Never tried honey, but I've always used fruit juice to brine all my jerky.  Sometimes I spray the jerky periodically with fruit juice while it's smoking.  Stickier, but worth it  :tup:

Cut the honey with about 1/4-1/3 hot water stir until thinned out then brush it on when at about the halfway mark.

Ive done this with fish and jerky albeit on the smoker and it makes a nice glaze. :twocents:

I usually do soy sauce/sugar/salt and whatever spice.
I'm planning a few batches.
Got a new smoker,this year.
Might try this honey deal.👍

Mitchlitchs or Spokane spice has some great jerky rubs. I used to just make my own but have really been liking their blends.
