Thanks!  That's close to what I figured but it just seems weak.   Last year I made this with only 1 bottle of ever clear and some fire ball and it tasted pretty strong :dunno:
Changing the proof is just a matter of diluting alcohol. If you use everclear or straight vodka from the store. adding juice is the same as adding water in your caculations. this site has a good calculator
http://homedistiller.org/calcs/dilute

Using 750ml of 190 proofe everclear, if I wanted to keep it at 40% ABV, this says I need to add about a liter of water (cider).  Is boiling up 1 liter of cider with the cinnamon and sugar to taste still going to be smooth or is the smoothness dependent on diluting the everclear down to the 10-15% range?   I'm looking for something that'll kick your butt on just a shot or two but still be smooth enough to sip, if that makes sense

Stored it in the pantry.  I put it in the frig just before i drink it.  Taste good cold.  Still have a jar not opened from last year.  Going to taste real good.  The longer it sits the better it gets.

I was thinking about canning the stuff in mason jars, then when you want a quart of it open the canning jar and then drop in the alcohol

I know last year I made a batch that was 12.1 ABV. Last year's batch was ok, but not as good as I would like (with that said, I also used rum). It was a sipping drink for me.

This year, I calculated it out to around 9.9% ABV. This was using the 2 gal of juice/cider, 750ml ever clear 190 and 500ml (I think it was 500, if not it was 600) of Fireball whiskey. The small left over amount seemed a lot smoother than last year's.

I still used the sticks (one per jar). Don't know how it will be until it sits a while. I like cinnamon though.

Just did a batch without the fireball because I liked the taste of it when I got done cooking the cider.  It didn't need anymore cinnamon for me or the wife.  I'm not sure I'll do it again though.  I cooked 6 liters of the cider, cinnamon sticks, vanilla extract, nutmeg, and cloves.  I poured the entire 750ml of 95% everclear into 3 liters of the cider and it was WAY too alcoholly.  So I added a bit of cider a little at a time until I got to where I still had an alcohol bite knowing that it would mellow, but not so much as to make it undrinkable for me and the wife.  Turns out, it was all 6 liters.  Now I got a lot of 10.5% ABV juice.  Tastes good but, not the alcoholic punch I was looking for.

I think 10% ABV is about the sweet spot. I think that's lower than many expect, but at that level it is pretty tough to recognize the alcohol and thus can sneak up on you, since it's essentially the equivalent of a couple beers.

Had a jar today and it was way better than a month ago when I made it.  Yummmy......

DoubleJ

I boil my juice (two gallons) with about 6 large cinnamon sticks and then add 151 proof everclear (750 ml) and fireball (750 ml).  When I finished and sampled it (same day) I was worried I just wasted a ton of money.  Day of was OK, One month later it is stellar.  I can't wait to try this batch in a six months to a year.  I am not a huge cinnamon lover myself and this mix is very good and not overpowering at all with cinnamon.
