One of my recipes uses dark brown sugar. The other uses molasses. I like the brown sugar one better. The molasses recipe has more of a bite to it (not from alcohol)  but I'm a wuss. I used to be a pilgrim  :chuckle:

I store mine in the freezer of my beer fridge. Nothing in there but hops anyway.

If you want it to be sip-able AND higher ABV then you need more flavor to cover the alcohol sting. Straight apple juice ain't gonna do it. I've thought about trying a batch using apple juice frozen concentrate straight with no added water. Frozen concentrate is like 4 times as strong as juice.

Using a stronger flavored fruit works really well. I used to make a 'flavored vodka' with sugar, alcohol, some water & frozen concentrate pomegranite or raspberry (or one of those frozen concentrate blends) which turned out pretty awesome! if I do say so myself  :rolleyes:

side note: afa Fireball, I bought cinn oil on-line. Gives me way more control as I can add it dropwise. It's SUPER strong! When watered down, it does louche tho like my absinthe. Oh yeah.... did I mention I make absinthe?  :yike:

we ended up at 105 proof, but wife didnt care for the alcohol bite so next batch im shooting for 120 and no bite except cider  :tup: i will say it is still warm and smooooooh as silk but DAMN cinnamon stick are spendy  :yike: :yike: :yike: :yike: :yike:

I used 1/2 cup brown and 1/2 cup white

Check out the Winco bulk bins.  I got mine there a few days ago.  $3.49/lb.  You can fit a LOT of cinnamon sticks into a pound

Can you post or PM me the recipe that got you to 105 proof?  That's more along the lines of what I was looking for.  And if you make 120 proof without the alcohol bite, well, hot damn, I'd like to know that one too :chuckle:

next time I make this, I'd like to put a couple of slices of apple in each jar.  Will this soak up a lot of the alcohol and make the drink itself less potent or will it still be ok?

I would think it would be ok and yes it will soak up the alcohol.

1 gallon apple juice
3 cups white sugar
8 cinnamon sticks
1 liter bottle of 190 proof moonshine or grain alcohol
Directions
1.   In a large stock pot, combine the apple cider, apple juice, sugar, and cinnamon sticks.
2.   Bring it to a boil, then take it off the heat and allow it to cool.
3.   Add the liter of high proof liquor.
4.   Pour this into mason jars, put the lids on, and let it mellow out. You could drink it right away, but it does get better after a couple of weeks.
This recipe makes about 9 quarts of apple pie moonshine. You could easily cut this recipe in half if that is too much.



dont waste your time using this recipe with a 5th of 151 everclear, its like theres no alcohol at all  :dunno: did i not add enough? i assumed by 1 liter a 5th was enough  :bash:

Still gotta be like 7%, so stronger than a lot of everyday beers. Wouldn't call it a complete waste, just realize it's not overly strong.

i think adding to the juice before it cooled killed some APV  :dunno: eityher way i added another 5th of everclear and well itys got its kick now, 130 proof roughly  :chuckle:

Are you saying two 5ths per liter juice? Or two 5ths to 2 gallons juice?

And 130 proof?  What am I missing?  :dunno:

Total liquid = 2 gal juice + 0.4 gal Everclear = 2.4 gal total (little off with sugar and  evaporation)
Total alcohol = 0.4 gal*(1.51/2) = 0.3 gal alcohol
ABV = 0.3 / 2.4 = 12.58% or roughly 25 proof

Cracked open a jar of the stuff I made a couple weeks ago and I really like it. Just shy of 10%, which is good enough for me. Flavor is really good, especially with the Fireball, in my opinion. Think it was 750mL of 190 Everclear and 500mL of Fireball. I had forgotten the vanilla, so it was just the cider, juice, sugar, and cinnamon sticks.
