Question about coyotes

Was walking along a wooded edge during Elk Season. Seen a doe she ran into the woods as soon as she saw me.  few minutes later BOOM!! scared the hell out of me Because it was close by. Later looking at a spot and thinking about going in and hunting two hunters came out. Talked to them and said something about a shot I heard they said it was them, so I asked what they shot at.
They mentioned it was a coyote so I let it go, but still wondered is it ok to shoot a coyote without retrieving it?
So ya my question is can you just shoot a Coyote and let it lay?

You do not have to take yotes after you shoot them.

Seems like a pain to retrieve them... now I dont feel guilty making my coyote graveyard
