need elk hamburger recipe for tonight

first year hunting got an elk. a buddy who is a chef is coming over for elk burgers tonight anyone got a recipe.
checked the internet not to many recipes for elk burgers and thank you to those who reply

I like to mix in blue or gorgonzola or feta cheese with meat. Serve topped with bacon. Serve on cibatta bread. Make a garlic aoili. Or just roast garlic in oven  wrapped in foil and some olive oil until soft. Make a paste and mix in with mayo and spread on bun.

I"LL add, tobasco sauce, garlic powder, chili powder, nutmeg,  salt pepper oregano to taste depending on recipe.

Salt and pepper only.....I've been eating elk burger lately and do not like to add anything to it because I want the real flavor with nothing masking it.  Elk meat comes in a limited supply.  I don't even serve them on a bun, but fry them up and eat like a steak on a plate served with whatever.

Put the meat in a collander in the refrigerator and put a bowl underneath to catch the blood.  I cover the meat with a sheet of saran wrap.  About an hour before you plan to eat divide the meat into equal size portions.  I usually make mine slightly smaller than a baseball.  Then I press each ball of meat by hand between 2 sheets of wax paper to make patties about 1/2 inch thick.  Season both sides. . . I usually use pepper, salt, montreal steak, creole seasoning, or some combination of the above.  I barbecue on high heat and make sure the grill is clean.  Take care at 2 points: (1) when you first transfer the meat from the wax paper to the grill and (2) when you flip the burgers.  The burger will seem a little crumbly at these times and you don't want to tear the patties apart.  I grill about 2 minutes per side, 3 at the most.  I like to serve these on a good toasted bun along with the usual toppings. 

Since I discovered that draining the blood will help keep the patty from falling apart I no longer add pork to my elk burger and I like the above recipe much better than beef burgers.

mix  1 packet of liptons onion soup mix with approx. 2 lbs. burger form into patties and grill  :tup:

I grind my meat with no fat .. I add 1 egg and a little bread crumbs to my burgers ...Works great and very tasty .. :tup:

A buddy and i ground some of his deer meat with 10% bacon ends, 90% venison and they made hands down the BEST burgers I've had, period. Just enough fat to keep everything together and fantastic flavor.

thanks everyone i went with several different patties we made a couple from all the recepits youall sent i have to say i really liked the elk and so did my buddy and his wife this was my first year hunting elk have done mostly deer butt DANG i love elk never had it till i got mine back from the butcher they did a good job but i think next year i will start to process my own thanks for all the ideas not a bad idea in the group

i must say nothing taste better than an animal you packed out for hours
