Salt and pepper only.....I've been eating elk burger lately and do not like to add anything to it because I want the real flavor with nothing masking it. Elk meat comes in a limited supply. I don't even serve them on a bun, but fry them up and eat like a steak on a plate served with whatever.
I like to mix in blue or gorgonzola or feta cheese with meat. Serve topped with bacon. Serve on cibatta bread. Make a garlic aoili. Or just roast garlic in oven wrapped in foil and some olive oil until soft. Make a paste and mix in with mayo and spread on bun. I"LL add, tobasco sauce, garlic powder, chili powder, nutmeg, salt pepper oregano to taste depending on recipe.
I grind my meat with no fat .. I add 1 egg and a little bread crumbs to my burgers ...Works great and very tasty ..
mix 1 packet of liptons onion soup mix with approx. 2 lbs. burger form into patties and grill
A buddy and i ground some of his deer meat with 10% bacon ends, 90% venison and they made hands down the BEST burgers I've had, period. Just enough fat to keep everything together and fantastic flavor.
