I have a Batch cooking in the oven right now! Can't wait to try them.I used a kitchen aid mixer with the meat grinder attachment to grind the meat and stuff the casings.
I've been making duck jerky for years but I always have a horrible time grinding the meat. It sometimes comes out of the grinder like a paste. I finally started taking it to a butcher just to get it ground. I hate spending the money on something I should be able to do myself. I bought the grinder from cabelas several years ago I believe it is a 1.5 hp grinder. It was advertised as a commercial grinder. Any suggestions?
Nice...I will have to try that.I got about 25 ducks and 14 buff geese I need to take out from the flock...
This sounds a lot less expensive than me taking it to the butcher and having it done for $5 lb.
