STUFFED ZUCCHINI TIME !!!

fINALLY ...Got me a couple ZUCCHINI big enough for me to stuff ..I post this every year ...Just in case some for got ... This time I added Italian sausage to my ground meat ...It is cooking right now ...Got me a mixed drink and I am happy  :dunno: :chuckle: :chuckle: :tup:  I post a picture when I am all finished ...

My wife slices it and adds it to sliced potatoes and tomatoes in a pyrex dish and covers it all with cheeses and some herbs and bakes it for awhile. Yummy stuff.

That sounds good too .. I used Italian sausage and ground meat with chopped onion - bell peppers and rice .....here is how they look ...they were damn good !!!!!! :drool:

Forgot to resize so here goes again. This is one she's putting together for tonite. Slice zucc topped with sliced toms, basil and shredded cheeses. :drool:

My wife coarse grates zuccini, small yellow necks, and potatoes, adds chopped walla wallas, and fries fritters....I add scrambled fresh eggs with sausage and Im good to go.

I hate to say it, but I actually miss good zucchini now.  Back when I lived in Spokane, those things would grow like weeds in the hot weather.  We had a running joke in our neighborhood -

Unfortunately my parents shoved so much of that crap down our throats when we were kids, I can't even look at a zuchini anymore without getting sick almost.  Yuk

Yum!  I eat it every night at this time of year.  Right now with snow peas till their gone, Olive oil and butter melted throw in sliced zucks (smalls) sprinkle with tomato chicken bouillon (Mexican isle)  add finely chopped lemon thyme, curry, and or basil. Lightly sauté.  Add diced garlic if desired. Brown both sides let set till doesn't burn the tongue.  Yummo!

Makes real good apple pie also. Just dice up the zukes and substitute for the apples. You won't know the difference.
