Smoked Salmon Dilemma
« on: September 16, 2013, 02:46:39 PM »
I have some fish that I put in a wet brine last night (no citrus) and now I have to make an emergency trip to Portland and wont be back until Thursday night. Will it be good when I get back or do I need to pawn this off to a friend to smoke?

Rinse it, cover it good and put in fridge. You will be fine!

way too long already, you brine for 7-8 hrs. rinse it WELL in water to kill some of the salt content and it should be ok.
