Tonight's Dinner

Breasted out 2 Mallards. Cleaned them up and sprayed with light coat of Olive oil, sprinkled with Montreal Seasonings. Place under High Broiler on broiling pan second level from the top. Broiled 4 minutes a side.
Veggies are Juilenned Onion, 2 carrots and 1 red pepper. Sauted until tender then added Balsamic Vinegar to taste which was 1 to 2 table spoons. My wife uses a chocolate or expresso flavored Balsamic. Mix thoroughly and then place a cover  over it.  I also cooked up some brown rice.
Put a scoop of brown rice down, then a scoop or 2 of veggies and then top with duck.

Simple, easy and tasty.

Thanks guys. I try to use them as soon as possible in one form or another. Next up will Kung Pao Duck, scratch recipe. I know some hunters that never eat fresh duck or goose. Everything gets put into the freezer. Lord knows what they are missing out on.
