Not much of a hunt, but I'm tagged out. I was sleeping in my bed, and was woke up by these guys gobbling their heads off just in front of the house. There was actually 4 gobblers, and some hens. They were in a perfect position for a stalk, so I threw on some clothes, and went for them. Boom, boom flop. Nice mature birds. shot with a 20 gauge.

I have never found a nest. The hen blew out of there within 10 feet from me. I was working through a bunch of sage heading towards a bird I have been playing with for the last few days. She startled the crap out of me. I grabbed my iPhone and took a quick pic and was on my way. Kind of ironic that it was Easter morning.

Got him on Wed. He was just strolling by with his brothers in the afternoon in an Oak grove eating acorns. Got me out of my O'fer from last year.

If you going to prepare it whole (roast, deep fat fry, smoke, etc) then pluck .... if you are going to cut it up (soup, pot pie, fingers, etc) then skin.

I don't ever deep fat fry, and I never pluck a wild bird.  PITA plus the wild bird fat us usually rather bad.  So to keep these wild birds from drying out if you want to roast whole or smoke...wrap in bacon after skinning!  Everything is better cooked with bacon, isn't it?  :drool:

If you do decide you are willing to go through all the mess and trouble of plucking...still use bacon!  Pull back the skin layer bacon and pull the skin back over the top holding the bacon in place.  It really adds a pleasant flavor to an otherwise bland wild turkey.  Even store bought turkey is rather good this way IMO.  Throwing some fresh thyme under the skin along with the bacon is one of my favorites too  :EAT:

And to get TD's rub he puts on them first....He's got the best peanut oil fried bird. Still won't give me the recipe.
