We were having RePete and his new woman over yesterday for dinner and since the weather was crappy all day yesterday here on the wet side, I decided to smoke some meats instead of BBQ.
Smokes up two pork loins, chicken legs and corned beef brisket, and they turned out great
Smoked the pork and brisket for 5 hours and then wrapped in foil and put them in the oven for 4 hours at 250. When I took them out of the oven they were so tender, it would melt in your mouth. I use a big chief smoker so there is not much heat, but lots of smoke flavor added to the meats

I got the idea from Rasbo, ho smoked one at the first Hunt WA BBQ and I have been waiting to smoke one ever since but finally got around to it.
If you get a chance to smoke a corned beef brisket. do you wont be disappointed
