Brisket left overs ideas - steaks too..breakfast!
« on: May 18, 2014, 10:05:36 PM »
Something I've been doing with left over steaks and this time some brisket.

I like to run the cooked meat through my hamburger grinder on the kitchen aid.  It really fluffs up the meat and take away any toughness too it.

Then I'll saute onions and peppers or I'll open a can of chili peppers if I don't have fresh and chop it all up.   Saute in butter until it's cooked,  beat some eggs and stir that in and make breakfast burritos.  The grind-ed meat goes a looong ways and makes a ton of burritos.

roll em up with cheese and the kids got a quick meal in the AM.  I try to keep stuff in there so they don't eat crap like cereal.

My egg bowl was too small  :chuckle:  filled it twice,  so a good dozen eggs went into the skillet.

anyone else grind cooked meat like this?

try it out, just be careful not to mash it or you can turn it to paste in the skillet.  The flavor is really good, these burritos turned out really tasty.

Left over brisket??  That actually happens??

Yeah, when I have almost any kind of left over meat in a small quantity, I like to shred it and fry it up with the potatoes and eggs.

My thoughts went right to hash as well when I read the title.

I mix all kinds of leftovers with my eggs, french fries work really well and usually suck heated up, except chopped up in eggs.

Interesting idea.  Will have to try it sometime

I had left over brisket ONCE.  And here is what I did with mine.  My wife, who goes easy on pasta and meat, was literally licking her plate.

Pasta - your favorite.  We did Penne noodles.  This dish seems to go best with thicker noodles.  Spiral or would be good too.

Cream Sauce:
Real Parmesan Cheese - roughly 1/2 cup
Real cream - heavy whipping cream from Costco is my favorite.  Roughly 1 cup.
Butter - real.  1\2 stick
Olive Oil - table spoon
Dash of cayenne pepper
Dash of pre-mixed taco seasoning
Grated fresh garlic - a few cloves
Garlic salt
Salt
Fresh ground pepper
Dash of lemon juice
Dash of tabasco sauce

Chop up brisket into 1/2 inch or smaller cubes.

Add butter and olive oil to sauce pan
Add fresh grated garlic - heat on medium until browned
Add everything but the parm cheese and cream and mix well.

Add cream, cheese, meat.  Stir constantly until just before boiling.  You don't want to boil this!!  Just need all cheese melted and for it to get nice and piping hot.

Pour over fresh cooked noodles.  Heart attack on a plate
