I'll try to keep it short, new experiment last night that got the thumbs up. Venison steaks about 3/4" thick. Filleted them in half but not completely in half, kept them hinged. Sauteed mushrooms, diced green peppers and onion. Sandwiched the saute in the steaks, Montreal steak seasoning on the outside and put what was left of the saute on top. Poured a thick red sauce on top of everything and put in the oven at 400 for about 8 minutes. Pulled, topped with a slice of cheddar and back in on broil till the cheese melted. I figured the warm saute would help cook it from the inside out so it wouldn't have to stay in too long or over cook. Was tender, juicy and easy. Mashed potato's on the side, good to go.
