coyote recipes?

Recently came across an area heavy with coyotes near my place and I'm curious to try and eat one of them. I figure since you can hunt them year round that they could be a good year round protein option. I know it's a bit taboo to eat dog so to speak, but I was wondering if anyone on this forum eats them and or if anyone has any recipes that are good. Everyone and their mother has heard the joke where you cook em on a cedar plank and throw the meat and eat the plank, so keep the judgment and negative comments to yourself if you can. Thanks!

Biggest problem with eating coyote is the amount of parasites.  I used to drop them into elk or deer burger until my vet told me not to.  She agrees there is a definite benefit to keeping their numbers down, but eating them is not one of them.  Cook well done if you do!  I've heard two rules of safety.  One says to make sure the meat is over 140 the other 160.  I would error on the 160 side myself.

We must have been very close to a den this past weekend.  Round worm filled scat piles everywhere!  Came home and bleached the bottoms of our boots but good!  I'm not much too squeamish about eating worms.  Do it all the time eating rock fish and bear meat.  But there is something about round worms that freak me to heck and gone!

Thanks guys! I've heard the parasite thing too. I think cooking it well will take care of any of that. If I get one Ill report back what the taste is like. Ill probably go out on Sat.

I thought the taste and texture was a lot like mature goat.  Not bad at all.  Makes me think making ground kebab (Iranian style kubideh) might be good.

Round worms would only be intestinal, not in the meat. Just don't open the abdominal cavity and they shouldn't be a concern. But as Rad said, I think I would err to the 160 mark
