Yes, you can freeze cheese after it is vacuum sealed.  When you thaw it, let it sit at room temperature until it is completely thawed.  That will help with the texture issues from freezing.  Some cheeses though will be a little crumbly.  Cheddar is one of them.  Softer cheeses tend to freeze very well.
I was once told by someone obviously much smarter than myself that cheese can be frozen, but only once. My first thought was how in the heck does the cheese know how many times it's been frozen, I'm not falling for that. Trust me, voice of experience, unless you want cheese crumbles, only freeze once, it knows.  :chuckle:

Dang that's a nice slicer  Mainly use mine for bb and jerky. Wild country open country can't remember the name PNA to clean so when I use it. I make sure it's a big batch of what ever to justify the 15-20 min cleaning.
Hey! I'm not a complete idiot I have parts missing. Though sometimes I wonder.

I have a 10" one and it has worked very well, especially since it was from the bargain cave

I want to upgrade to the 12" for the longer throw it has though.  One of the 12" has about a 5" longer throw than the other which is nice when making bacon.

The 12" says its a 10.5" throw, almost not long enough.
What is it on the 10"

What are some of the things you guys have done using it to save money?
I already have 24lbs of buck board bacon waiting, I plan on doing roast beef and ham for sandwiches.

I am sure there is some other stuff. Cant wait to hunt this year and use it. I intend to get a grinder also this year before season.

They work great for slicing tomato's for burgers and perfectly cut onion rings also bologna thick sliced instead of having to slap on 2 slices of the thin store stuff. It will also make short work of a finger or two :chuckle:
