Venison pepperoni.

Filled a tag today with a doe, and have been wanting to do a DIY pepperoni a try.  Any good recipes out there?  Where do I buy the cure and casings?  I have a grinder, stuffer, and smoker.  Lets hear some ideas.

I buy all that stuff at either Cabelas or Bass Pro they have everything you need.

Since you are from Puyallup make a run up to Mountain View Meats and try their hot pepperoni.  If you can figure out how to make that stuff that would be top shelf.

With making pepperoni, make sure you add ample amounts of water to the mix.  Since the casings are so small, you will have a very difficult times stuffing them without adding water.

I would start with a kit they sell them at most sporting goods stores the ones from hi mountian seasoning are pretty good and come with everything you will need to get started they have several different flavors once you figure out if you like doing it or not then you can start mixing your own seasonings Good Luck
