I'm doing a prime rib roast in the smoker this year for Christmas day. We have been doing a traditional American-Italian feast the last few years for Christmas Eve. It's called Festa dei sette pesci, or Feast of the Seven Fishes. There's many variants of it but we've just been making up our own. You basically start with 7 different kinds of seafood and go from there.

Foil, towel, cooler or ? to keep the temp up...thanks i think my temp probe may be off a bit cuz mine always comes out just a smidge rare
