Finally getting around to posting this. A buddy and I finally got around to processing our elk, and deer. Did 30 lbs of elk summer sausage, 20 pounds of pepp sticks, 25 lbs of brats and 50 lbs of breakfast sausage

Protein heaven! That looks awesome. One of these years, I am going to learn how to make sausage, but for now I just haul packages of trimmings to a processor for summer sausage and pepperoni.
