Bacon!
« on: March 01, 2017, 06:10:24 PM »
Ahh, one of the major food groups for certain (and I don't care what they say damn it, its good for the body)  :IBCOOL:.  How do you fry your bacon; is it burnt to a crisp or somewhere in between an audible oink and the Idaho/Montana fire of 1910?  What ways do you deploy this delectable table fare at your ranch....fried, crumbled in chili/soups, the always famous BLT (and C if you're doing it right), wrapped around steaks on the BBQ?  Let's talk bacon here  :fire.:

It's good to keep a lot of it on hand. There are many other items in the fridge we just don't need.  :chuckle: :chuckle: :chuckle:

Fry your bacon up first, doesn't matter how much it's your heart.
slice up a couple of zucchini an onion and really whatever veggies you like in a stir fry, sometimes the wife uses those frozen stir fry packs from the grocery store but fresh is better and stir fry it all together, I like the veggies to be still firm not raw but not mush.
the wife uses all kinds of seasoning and sometimes none it always turns out good.
Probably a good idea not to eat before getting your cholesterol checked.

Cooked on a pellet grill so it is just starting to get crispy but not completely dried out.  Takes longer, but turns out great, and no mess in kitchen
300-325* for about 30-40min depending on how you like it and your pellet grill cooks.  I check every 15 min or so and rotate if there are hotspots..

My wife and I were on Kauai last week and our in room option was the microwave, which is OK.  However, the resort had some propane grills and I cooked a bunch one morning on one of those.  It was delicious.

400 degree oven on a half sheet pan lined with heavy foil for about 20 minutes.  Easiest and least messy way to do bacon, and it almost always is all done consistently, unless the cuts are uneven.  When done, just toss the foil.

Costco has about the best deal on Hempler's (WA company) uncured center cut bacon, if you are not making your own.

 :yeah:

Just smoked up 3 slabs this last weekend and they weren't nearly as meaty.  Two were from Costco and the third was from a local pig we butchered 2 weekends ago.
