Do you keep the snails around for a while to get them cleaned out? I've heard feeding them corn meal for a couple days.

I've heard the same thing, thought about doing it. But the friends yard that I caught them in doesn't use pesticides. I just scrubbed them up well. Tasted great. Diced up some of the body meat after it was cooked and added it to the risotto at the very end so it wouldn't cover cook and become chewy. Kept a few whole for a garnish. Ya eat with your eyes first right?

Snails and clams are pretty similar in my book for taste and texture.

Sorry bra, I've never tackled cooking slugs. Far be it from me to judge what people cook, but for some reason slugs don't sound good to me.
Probably the only reason I like snails is because of that one time when I was a little kid I had escargot in a restaurant and I was forever hooked.

They are easy to cook.  Just salt the hell out of them, then go grab elk steaks out of the freezer....

What kind of snails? I heard the snails we have here on the west side are poisonous. They have a dark yellow shell and are about a half inch in diameter. I believe they are an invasive species.

I used to always see people collecting the snails from the lakes around thurston county. They were black and fairly large...about the size of the one in the OP pic.
